Vegetable Lasagna Roll

Lasagna is one of the ultimate comfort food and you can make it healthier with extra vegetables. Serve it not in your typical layers, but in rolls, for easier and neat servings.

Ingredients:
10 Lasagna noodles
5 garlic cloves (minced)
¼ butter
1 cup milk
5 cups vegetable broth
5 cups of cauliflower florets
1 cup fresh spinach (chopped)
½ cup mozzarella cheese (shredded)
¼ cup parmesan cheese (grated)
¼ cup provolone (shredded)
Salt and pepper

Cook lasagna noodles in boiling water for at 8-10 minutes. While waiting for the pasta to cook, make the white sauce on a separate pan by putting butter first then sauté the garlic. Add water in the pan and the cauliflower florets then boil it for 10 minutes, until it is tender.

As you wait for the cauliflower, drain the lasagna noodles and pour over clean, cold water and set aside. After 10 minutes of boiling the cauliflower, do not drain the excess water and use a blender to get a smooth consistency. In the same pan, put the cauliflower mixture together with its broth and add milk then mix the chopped spinach until the mixture thickens and add salt and pepper to taste.

Lay the lasagna noodles in a flat surface then spread out the white sauce with vegetables then roll the lasagna noodles. Finish all 10 lasagna noodles then in a casserole dish, spread out half of the remaining white sauce and put the lasagna rolls in rows the top it off again with the remaining half of the white sauce.

Once the lasagna rolls and the sauce are all set, garnish with chopped spinach and sprinkle the parmesan, mozzarella, and provolone cheese on top. Cover the casserole dish with a foil and cook the lasagna in a preheated oven for at least 15 minutes.

Seafood Carbonara

Enjoy your seafood experience by adding it to your pasta dish. This is a lighter and healthier version of a creamy carbonara. Enjoy its variety of tastes that will leave you wanting for more.

Ingredients:
½ kg linguini pasta
4 tablespoons of olive oil
4 cloves garlic (minced)
1 can of tuna
¼ kg shrimp
1 can of mushroom
1 cup fresh low-fat milk
½ cup cream
½ cup parmesan cheese
Dried basil (chopped)
Salt and pepper

Cook the linguini noodles in boiling water for 8-10 minutes. While waiting for the noodles, heat the olive oil in another pan and sauté the garlic. Cook the shrimp in olive oil for a minute then add the mushroom and tuna. Wait for a few minutes for it to cook then add the milk and cream. Mix the sauce well then add ¼ cup of parmesan cheese.

Drain the noodles once it is cooked and pour clean, running water to stop the cooking process. Put the linguini in the white sauce mixture and mix well. Garnish with chopped basil and the remaining ¼ cup of parmesan cheese.

Chicken Alfredo with White Wine

For a more formal evening, you can try adding an extra kick of white wine. This is definitely lighter to eats and it is best served with garlic bread.

Ingredients:
½ kg fettuccine
2 tablespoons olive oil
3 cloves garlic (minced)
2 chicken breasts
1 cup mushroom
1 ½ cup white wine
¼ cup cream
½ cup ricotta cheese
¼ cup parmesan cheese
Salt and pepper

Cook fettuccine noodles in boiling water for 8-10 minutes. On a different pan, boil the chicken breast until it is cooked. While waiting for the pasta and chicken, sauté garlic in olive oil then add the mushroom. Set aside and when the chicken breast is ready, keep the chicken stock and shred the chicken into thin strips.

Once the fettuccine is cooked, you may drain it and pour cold water all over and set it aside. Go back to the sautéed mushroom and garlic then add the chicken strips. After a few seconds, add the chicken broth, white wine, and cream. Add salt and pepper to taste. Mix the fettuccine and white sauce and serve it with the parmesan and ricotta cheese on top.
